Feeling a bit tired, sore or inflamed? Maybe you could use a boost to your omega 3 intake? Try this Spicy Salmon on for size! It also features fresh ginger and garlic to help give your immunity a boost. Quantity is per 2 salmon steaks, as I don’t like to cook too much of this fish in advance! #Recipe as follows.
1. GRIND
– 1 tsp coriander seeds
– 1 clove garlic
– 1cm of fresh ginger
– 1cm fresh lemon grass
– 1/2-1tsp chilli flakes (depending on your heat tolerance)
– generous crack of s&p
– juice of 1/2 lemon
2. MARINATE
Rub the paste into your salmon steaks and leave to marinate at least 30mins.
3. GRILL
On a non-stick pan grill your salmon with marinade until it is cooked on one side, then flip to cook on the other. You may also opt to bake it.
4. SIDES
I served my salmon with a simple salad spread between two bowls or containers, consisting of:
– 1 cup cooked pumpkin cubes
– 1/2 a medium zucchini cubes (grilled)
– 1 bunch chopped asparagus (grilled)
– 1 cup baby spinach
– 1/2 cup shaved or thinly sliced fennel bulb
5. PLATE
Once salmon is cooked, place it on top of your salads. Add about 1/4 cup finely chopped coriander on top of each the steaks. Squeeze over some fresh lemon juice, a sprinkling of sesame seeds (I used black ones) and some more salt and pepper.
