Felt like devouring something pretty today… but why eat cafe food when you can make something colourful, nutritional and delicious at home for a fraction of the cost? …And I whipped up a big batch of this Ruby Red, Fennel & Watercress salad, served with grilled salmon, in less than 20 minutes… less time than a Melbourne cafe table wait ?
It also contains a host of additional benefits too, like vitamin c, omega 3s and antioxidants to give your winter immunity a supercharge… And, f*ck winter basically, don’t let the season dictate that you have to eat stodgy, heavy food. Keeping variety in your eating ensures you receive a broad spectrum of nutrients, colours and textures. And did I mention, it tastes amazing? ? #Recipe as follows.
1. SHAVE
– 1 large fennel bulb
I used a veggie peeler, easy as!
2. COMBINE
Mix fennel in a large bowl with – approx 50gm watercress, or 2-3 generous fist fulls
– 1 ruby red grapefruit (thinly sliced)
– 1 punnet of blueberries
3. DRESS for SUCCESS
Dress with:
– juice of one lemon -1 tbsp flax seed oil
– s&p
4. GARNISH
