Been a while between Monday Meal prep posts, so thank you @anti_detox_girl and @grace_tbtw for reminding me about this one!
It’s a super simple recipe for Crispy fish, I have used barramundi but most varieties of fresh fish will work. #Recipe as follows.
1. DIP
Cover the bottom of a shallow bowl with about .5cm of egg whites. Dip the fish and quantity of choice, fillet by fillet, into the bowl, coating both sides.
2. SEASON
Transfer the coated fillets to a plate and season with desired amount of salt and pepper.
3. GRILL
Give your grilling pan a quick spray of oil and cook the fillets one side at a time on medium high for approx 15-20 mins till cooked through.
It’s as simple as that!
I also made a simple salad of seasonal fruit/veg to go with, using a heirloom tomatoes, celery, fresh corn, red onion, fresh lime juice, coriander, s&p and a drizzle of flax seed oil. I then served with grilled asparagus and a sprinkling of chilli flakes for some kick. For a post workout meal you could add some basmati rice, quinoa or fresh tortillas.
