Need a bit of spice in your week? This soup inspired by Mexican Menudo, is sure to fire you up and keep the winter chills at bay! Real Menudo uses ‘hominy’ which is type of alkalised white corn, and makes the soup heartier and better for a post-workout meal, it’s sometimes available where you buy Mexican grocery items. However substituting chickpeas (or any firm beans) and corn will give similar texture, and will be fine to eat anytime.
Recipe as follows, makes around 4 serves, adjust for bigger prep.
#1. GRILL
-1/2 red onion
– 2 cloves garlic
– 500gm diced chicken breast
Until golden.
#2. SLOWCOOK
All of the above, plus:
– 1 400gm tin diced tomatoes
– 750gm tin hominy
OR – 1 400gm tin corn (or fresh kernels) & 1 400gm tin chickpeas (or another legume of your choice)
– 1/2 head celery (diced)
– 2 tablespoons tomato paste
– 1tsp fresh ground cumin – 1tsp fresh ground coriander seeds
– 1 tsp hot paprika – 1 tsp chilli flakes
– 1 chicken stock cube
– s&p to season
– juice of one lime
– 750ml water
#3. LEAVE
To cook for approx 6-8 hours
#4. GARNISH
Either serve or store portions with a topping of shredded red cabbage, a little avocado, a fistful of fresh coriander and a wedge of lime.
